Strawberries & Cream Waffles

Posts are going to be a bit sparse this week, because WD and I volunteer our time each year to help out at the Tennis Challenger Tournament.


I like WD to start off his ballrunning mornings right, so I made some Strawberries & Cream Waffles.


Start by whisking 4 egg yolks, 1 1/2 cups water, 1/2 cup applesauce(if you have some of that strawberry flavored applesauce, now would be a great time to use it,) and 1/4 cup oil or melted butter in a large bowl.

Add 1/2 cup brown rice flour, 1/2 cup coconut flour, 1 cup white rice flour, 1/2 cup arrowroot starch, 1/2 cup tapioca flour, 1 tbsp baking soda, 1 tbsp baking powder, and 1/4 tsp salt.  The mixture will be quite thick.

In your mixer, whip up 4 egg whites to stiff peak.

Fold egg whites into the batter.

Chop up a handful of fresh strawberries.

Fold strawberries into the batter.

Pour 1 cup of the batter into your waffle iron.  I like a nice thick Belgian style waffle, and love my Presto flip-side waffle iron.  Flip the iron over after closing it.

After 4 minutes remove your waffle, and drizzle on a glaze of 3 tbsps half & half mixed with enough powdered sugar(a bit more than a cup) to make a glaze.

You could stop here, but I'm a more is more kind of gal.  So I topped these with some strawberry sauce(berries, sugar, & grand marnier heated until it thickens,) and fresh whipped cream spirals.

  3. Cool about the tourney, and the waffles look delicious.

    You just reminded me that I'd promised Prince Go-for-it waffles for dinner tonight. I was thinking we'd just be through the wedding and it'd fit my tired energy level. But I over-estimated the energy level and under-estimated the amount of much-easier-to-serve leftovers. :-)
