Pizza Night

I love doing make your own, interactive meals with the kids.  I've shared how much my kids enjoy these nights when we make things like quesadillas and summer rolls.  Pizza night is another interactive meal night.  Everyone gets to make their own pizza creation using their favorite toppings.  Snuggle Bunny is partial to pepperoni and olives.

The trick of course is that in a gluten-free home, you can't just crack open a tube of Pillsbury Pizza dough.  (Not that we ever did that when we were gluten-eaters, pizza dough's not that hard to make.)  Here's my recipe for gf pizza dough.  I start by whisking together 3/4 cup brown rice flour, 1/2 cup sorghum flour, 1/2 cup sweet rice flour, 1/2 cup tapioca flour, 1/2 cup arrowroot starch, 2 tsps xanthan gum, 1 1/2 tbsps sugar, and 3/4 tsp salt in a medium sized mixing bowl and setting this aside.

I sprinkle a packet of yeast and a tablespoon of sugar in my mixing bowl, and add 3/4 cup of water & 1/4 cup of milk both heated to 115.

After 5 minutes, I beat 1 whole egg and 2 egg whites with a wire whisk until they are foamy. 

I add the eggs, 2 1/2 tbsps olive oil, and 1/2 tsp apple cider vinegar to the yeast mixture.  After combining, I add the dry mix.

The dough will be very sticky.  GF pizza doughs are stickier than glutenous ones.  It's fine, because you won't be kneading this dough.  Preheat your oven & pizza stone to 400.  Drop a ball of dough on parchment paper, cover it with plastic wrap, and spread it out with your fingers using a circular motion. 

This recipe makes one large pizza, 2 mediums, or 4-5 personal sized pizzas.  Transfer your dough still on the parchment to your stone and bake without toppings for 10 minutes.

Top your pizzas with marinara, cheese, and your favorite toppings.  I made mine with jalapenos, pineapple, and mushrooms.

Whirling Dervish likes a more classic(and as a teenaged boy, a giant sized) pepperoni and extra cheese pizza.

The topped pizzas go back in the oven either on your pizza stone or directly on the oven rack for 10-15 minutes.

  5. Yum...Of all the combos we've tried, I have to say I've never seen pineapple, jalapeno, and mushroom! The hot and sweet idea intrigues me, and we might have to give it a try.

  6. I don't know why I've never thought to do individual pizzas with my pizza dough. It does make a little more work, but it would be fun!
