Easy Sausage & Apples Skillet

It's been an exhausting week dealing with the Susquehanna flooding.  You can read more about it here and here.  I've been turning to quick & easy one dish meals as a way to get dinner out.  If you set your kids to potato peeling while you work on the apples and carrots, this is an especially super quick & easy one dish meal.  This is not going to be one of those recipe tutorials where I show a ton of step by step pics.  My camera and I haven't been friends lately, but here's my Sausage and Apples Skillet.

I started by peeling and chopping 5 potatoes and tossing them into a large cast iron skillet over a medium flame.  I peeled and chopped 4 large carrots, giving the potatoes a quick flip after peeling the carrots, and then another whirl in the pan after adding the carrots.  I peeled and chopped one onion, and added it to the pan, stirring.  I peeled and chopped 2 honeycrisp apples, and added it to the pan, stirring again.  I chopped a handful of baby bella mushrooms and a package of precooked cheddar jalapeno chicken sausage and added them to the pan with another quick stir.  After a couple grinds of pepper and a couple shakes of garlic salt, the skillet went into a 350 oven for 25 minutes.

I love using honeycrisp apples in dinner recipes.  They're the perfect mix of tart and sweet.

  1. I never think to put apples in our dinners like this. I'm sure it's just the perfect addition. Maybe because apples don't stay around long enough around here. And when we can get Honeycrisp for an affordable price, I think there'd be a mutiny if I used them in cooking! :-)
