Go, Go, Go + a Recipe

You know how you can return from vacation, and think, "I need a vacation to recover from my vacation."?  Well, this was one of those weekends when I could use a weekend to recover from my weekend.  On our big family calendar for this weekend we had markered in 3 house guests(little brother + 2 friends) for the golf outing bachelor party,

3 birthday parties,

all for SB's classmates,

2 lacrosse games, the second of which finally found good spectator weather(we had the first 2 weeks of games cancelled for snow, followed by 6 weeks of constant rain,)

a Preakness party at a friend's house,

a fundraiser pancake breakfast(WD volunteered in the kitchen, we ate,)

and a chorus concert.

I'm whooped, and wishing there was a slice of this Strawberry Cheese Tart left for me to be munching on while writing this.

No pictures of the assembly process today, just the recipe.  In my food processor bowl, I whirred together 1/3 cup sorghum flour, 1/3 cup almond meal, 1/3 cup coconut flour, 1/3 cup tapioca flour, and 3 tbsps sugar.  I cut in one stick of cold butter, cut into chunks.  I mixed in 2 egg yolks and 1 whole egg, pressed the dough into a greased tart pan, and baked it at 300 for 30 minutes.  While it was baking I made the filling.  I beat together 1 - 8oz block of cream cheese with 3 tbsps of honey, 3 tbsps of agave nectar, and 1 shot of Tequila Rose(strawberry flavored liqueur.)  After turning out the baked tart, I spread the filling out and topped it with some sliced strawberries and brushed them with some warm strawberry jam.
