Apple Tarts

I like to keep fruit on the counter, because it's easier to remember that fruit makes an excellent snack when it's front and center and not hidden away in the refrigerator.  But keeping fruit on the counter isn't a guarantee that it'll get eaten, and that means sometimes finding ways to use fruit nearing it's end of usefulness.  Some apples that had been sitting on my counter for too long led to having apple tarts for dessert the other day.

I started with 1/5 of my GF pastry dough.  I make huge batches and keep it in the freezer at all times.

I rolled the dough into several 6 inch circles.  The chunk of dough I used made 9.

I mixed together 8 oz of cream cheese with 1/3 cup sweetened condensed milk.  I had an opened can of s.c. milk leftover from the homemade Almond Joy candies I made the other day.

I spread the cream cheese mxture to within an inch of the edge of the circles.

After coring and slicing 4 apples, I tossed the apple slices with 1/4 cup sugar and 1 tbsp cinnamon, and arranged them on top of the cream cheese.

I folded and pinched up the edges of the tarts, brushed them with some butter, and dotted the tops of the tarts with some additional butter.

These went in a 400 oven for about 30 minutes.

I brushed some warmed apricot preserves over the top of the apples when they came out of the oven.  So good!  These are amazing warm with some vanilla ice cream, but also good cold and eaten by hand.

  3. Haven't seen cream cheese used as a base for apples before but it's a great, easy idea. Those tarts look very pro. Gorgeous!
