Apple Galette

Sometimes I want to play in my kitchen and make 4000 step dessert recipes, and sometimes I just want something easy.  Galettes, those fantasticly rustic, free-form,  french tarts, decidedly fall into the easy category.  The other day I whipped up a delicious Apple Galette.

I had a small chunk of my gf puff pastry sitting in my frig, but this could be easily made with refrigerator pie crust.  Roll out your pastry dough on a sheet of parchment paper.

Don't worry about making a perfect circle.  Galettes aren't about perfection.

I spread out some apricot preserves, but this would be wonderful with apple butter, or whatever you have on hand.

Normally I'd use a Granny Smith apple, but I had Red Delicious in the house.  No worries, it turned out awesome regardless.  Peel, core, and slice 3-4 apples into 1/8" thick wedges.

Toss your apples with 2 tbsps sugar, 1 tsp apple jack or apple brandy, and 1/2 tsp cinnamon.  Arrange overlapping, so that they're pretty.

Using the parchment paper to help you, turn up the edges of the pastry, creasing as you go.  Chill for 15 minutes, and brush with butter, then sprinkle on 1 tbsp sugar.

Place in a preheated oven at 400 for 15 minutes before reducing the heat to 375 for another 30 minutes.  Let cool enough to eat before slicing.  This is terrific on it's own or if you're a more is more kindof person, a scoop of vanilla icecream completes this.
