Sweet & Sour Pulled Pork

Crockpot meal solutions are vital for keeping a family with kids in multiple sports running.  My boys love Pulled Pork Sandwiches, and pulled pork is one of those things that you can so easily make with a crockpot.  For this recipe, I use my mini crockpot, instead of my giant one.

First thing in the morning, after getting the boys off to school, I tossed a well trimmed 1/2 a pork shoulder that was still mostly frozen in the crockpot.  Pork Shoulder is a super cheap cut of meat that breaks down nicely in the crockpot.  I usually chop them in half, trim the big chunks of fat off(saved for rendering,) and freeze them when they're on sale.  I added several turns of the pepper grinder, 2/3 cup apple butter, 1/4 cup plus 2 tbsps apple cider vinegar, 3 tbsps brown sugar, 2 tbsps soy sauce, and 2 tbsps tapioca starch.  Pop the cover on and turn it on low.  Go hit your day.  When you've dragged your soaking wet children home(why do they practice in torrential downpours?) you just have to pull apart the meat which will easily shred, because the crockpot has done it's magic.  The meat will pull apart in the amount of time it takes to toast their bread.

I served these on toasted Udi's bread with a side of horseradish coleslaw.  If you are gf and have yet to try Udi's bread, go run out and buy some right now.  So worth it, even if you have to drive completely out of your way to get it.  After discovering Udi's bread I drove so far out of the way to buy it and hoard it for months before Wegmans began carrying it.(Yay-Wegmans for being so responsive to customer requests.)  Now it's just part of my regular grocery shopping.

  1. I don't have kids at home but I sure love crockpot meals. I have never used your seasonings but I am bookmarking this to try. Sounds great.
    I never heard of Udi"s bread but I am certainly going to look for it. Have a great weekend. Ginger
